Our own master chef to take on Sydney challenge

A leading Geelong chef is set to take on the nation’s best culinary masters at Australia’s own version of renowned Japanese television battle Iron Chef.
Black Bull Tapas Bar and Restaurant’s Daniel Brehaut said he was feeling confident in the lead up to the prestigious competition in June.
“I’ve been preparing myself for the event, so I’m not too worried,” he said.
“I’ve been given some constructive criticism and have been talking to people about how I’m going to approach the competition.”
The former Empire Grill head chef said the contest required competitors to produce 12 dishes built around a mystery ingredient in front of a live audience.
But there’s a catch: all dishes must be on the plate in one hour.
Mr Brehaut liked the timed battle to popular cookery game show Master Chef.
“This is the real Master Chef,” he said.
“All that stuff you see on Master Chef we’ll be doing in the competition and have been doing for years.
“The only difference is they get 90 minutes to make one dish.”
Mr Brehaut said he would bring his experience cooking Spanish tapas to the kitchen in Sydney.
“I’m probably going to apply a modern tapas theme because they don’t give you much of the mystery ingredient and it will only scratch so far,” he said.
“Also, you’ve only got one hour, so you need to use quick methods of cooking, like poaching or pan frying.
“The tapas we’re doing at Black Bull is going to be perfect.”
Mr Brehaut said the winner would receive a gourmet European tour and an invitation to work in a Michelin-starred restaurant.
“I really want to make an impact and I think it would be great for Geelong,” Mr Brehaut said.
“Overall, it will help lift the standard in Geelong so people will take us seriously.”
